Sweet, tangy, and bright — this Lemon Tart cuts through all the rich holiday eats with a refreshing bite. It’s the perfect make-ahead dessert for potlucks or parties, and topping it with whipped cream and fresh berries makes it look like you went all out (even though it’s super easy).
Ingredients
1 store-bought pastry tart shell
4 eggs + 2 yolks
½ cup butter
1 cup sugar
zest of 2 lemons
½ lemon, juiced
whipped cream and fresh berries, for garnish
Instructions
Bake the pastry tart shell according to package directions and allow to cool.
Place the eggs and yolks into a medium mixing bowl.
In a medium pot, combine the butter, sugar, lemon zest and lemon juice. Whisk together over medium-high heat until smooth.
Slowly add the hot butter mixture to the eggs, whisking constantly to temper. Do not add all at once, or the eggs may curdle.
Return the mixture to the pot and cook on low heat, whisking until it thickens and coats the back of a spoon.
Pour into the tart shell and bake at 350°F for eight to ten minutes.
Allow the tart to cool completely, then serve with whipped cream and fresh berries.
