This dish is all about comfort — fall-apart beef braised slow and low in red wine and herbs. It’s the kind of recipe you break out when the whole ‘ohana comes over for the holidays, served up with scoops of rice or mashed potatoes. Big flavor, no stress, and plenty to go around.
Ingredients
3 lbs. beef short ribs
salt and pepper, to taste
3 carrots, chopped
1 large onion, chopped
2 stalks celery, chopped
5 garlic cloves
1 cup red wine
1 qt. beef broth
1 sprig thyme
1 sprig rosemary
1 sprig parsley
3 bay leaves
Instructions
Preheat the oven to 350°F. Season the short ribs with salt and pepper and place in a large pot or dutch oven. Sear the short ribs until browned on all sides. Remove and set aside.
Add the carrots, onion, celery and garlic to the pot. Cook for about five minutes until softened. Return the short ribs to the pot. Pour in the red wine and simmer until reduced by half.
Add enough beef broth to submerge the ribs. Stir in thyme, rosemary, parsley and bay leaves. Cover with a lid and place in the oven. Braise for two to three hours, or until the beef is fork-tender.
Remove the short ribs and serve hot with rice or mashed potatoes.
