Inspired by the energy of game day gatherings and backyard grilling. This is a bright, tropical twist on a classic party favorite—perfect for sharing, dipping and celebrating big plays with family and friends.

    Ingredients

    2 poblano peppers
1 large pineapple, skinned, cut into ½” rings and cored
    2 large tomatoes, small diced
1 small red onion, small diced
    4 cloves garlic, minced
1 jalapeño pepper, seeded & minced
    1 bunch of cilantro, minced
    1½ tsp. salt
    2 limes, juiced
1 tbsp. Tabasco green pepper sauce, optional

    Instructions

Heat grill over high heat. Roast the poblano peppers until the skin is charred and place in a bowl. Cover with the saran wrap and set aside to cool. Place the pineapple slices on the grill and cook until lightly charred on both sides, about two to four minutes per side. Remove the pineapple from the grill and let cool. Remove the skins and seeds of the poblano pepper, dice into small pieces and add to a large bowl. Chop up the pineapple slices and add to the bowl along with the tomatoes, red onion, garlic, jalapeño pepper, cilantro, salt, lime juice and Tabasco green pepper sauce, mix well.

Serve with your favorite tortilla chips. This is a great appetizer to share with family and friends during the games.
