Every time Chef Alyssa Moreau makes these Silken Tofu Chocolate Pudding Tarts, she’s reminded how many ways this chocolate pudding can be used. Serve it as a simple pudding, turn it into a pie filling or layer it into a tart like this and top with fruit and a little whipped cream. Easy, creative, and so ono.
Ingredients
¾ cup pecans or walnuts
½ cup soft dates, pitted and chopped
1½ tsp. vanilla extract, divided
1 tbsp. cocoa powder
dash of salt
1 box silken tofu (Mori-Nu brand), soft or firm
¾ cup chocolate chips, melted
2 tbsp. maple syrup
1 cup berries
Instructions
Pulse the pecans, dates, ½ tsp. vanilla extract, cocoa powder and salt in a small food processor until the mixture begins to stick together. Spoon the mixture into a cupcake or tart pan and press firmly to form the crust.
In a small food processor or blender, combine the silken tofu, melted chocolate chips, maple syrup, 1 tsp. vanilla extract and salt. Blend until smooth, stopping to scrape down the sides as needed.
Spoon the chocolate filling over the prepared crusts and gently smooth the surface. Top with fruit of your choice, chill briefly if desired, and serve.
