This Fresh Napa Cabbage Kim Chee Salad is crisp, savory, and refreshing—especially in the spring when napa cabbage is young and extra firm. The bright, punchy flavors make it super ono, and it’s best enjoyed fresh while the cabbage still has that perfect crunch.
Ingredients
1 head napa cabbage
1 bunch chives, cut into 2″ lengths
½ carrot, julienned
¼ cup gochugaru
5 cloves garlic, minced or grated
2 tbsp. minced ginger
3 tbsp. green onion, finely chopped
2 tbsp. fish sauce
2 tbsp. corn syrup or malted rice syrup
1 tbsp. apple vinegar
2 tbsp. sesame seed oil
Instructions
Cut the napa cabbage into bite-sized pieces, approximately 1½” squares, and place in a large bowl. Add the chives and carrot, tossing gently to combine. Keep chilled until ready to serve.
In a separate small bowl, combine the gochugaru, garlic, ginger, green onion, fish sauce, corn syrup, apple vinegar and sesame seed oil. Mix well until fully incorporated and refrigerate until needed.
Just before serving, add in the dressing over the cabbage mixture and toss until evenly coated. Serve immediately for the best texture, as the dressing will naturally cause the cabbage to soften if it sits too long.
