A bright, refreshing side with a balance of tangy, sweet and heat. Perfect for potlucks, picnics or as a cooling contrast to richer dishes.

    Ingredients

4 cups Japanese cucumber (about 2 medium cucumbers)
    2 tbsp. fresh lime juice
1 to 2 tbsp. ume or rice vinegar (+ ½ tsp salt if using rice vinegar)
    1 tsp. fresh garlic, grated
1 fresh Thai chili pepper, seeded, chopped fine
    pinch of cane sugar
    salt, to taste
    ¼ cup fresh cilantro, chopped
    ¼ cup peanuts, crushed (optional)

    Instructions

Partially peel the cucumbers, then cut in half lengthwise and remove the seeds. Chop and place in a large bowl.

In a small bowl, combine the lime juice, vinegar, grated garlic, chopped chili pepper, sugar and salt to taste. Pour over the cucumbers and toss to coat. Let sit for 10 to 30 minutes to marinate, then drain.

Stir in the chopped cilantro just before serving and top with peanuts for added crunch. Optional: reserve the marinade and add a little back in if serving later or for leftovers.
