Kulolo Bread Pudding with Haupia Sauce puts a Hawaiʻi twist on a traditional favorite! Made with locally made poi, Chef Mari Wills transforms the flavors of kulolo into a warm and delicious bread pudding topped with creamy haupia sauce.

    Ingredients

    3 eggs
    1 lb. bag poi
    24 oz. coconut milk, divided
    12 oz. can evaporated milk
    1 cup brown sugar
    2 tsp. vanilla extract, divided
    1 tsp. salt, divided
    1 package Hawaiian sweet rolls
    1 cup granulated sugar
cornstarch slurry (equal parts cornstarch and cold water)

    Instructions

Preheat the oven to 350°F and grease a bundt pan or 9″x13″ baking dish. In a medium bowl add the eggs, poi, 12 oz. coconut milk, evaporated milk, brown sugar, 1 tsp. vanilla and ½ tsp. salt and whisk together. Tear the sweet rolls into 1″ pieces and place in the pan. Pour the custard evenly over the bread and let soak for 10 minutes. Bake for 50 to 55 minutes (bundt) or 60 to 70 minutes (9″x13″), until the custard is set.

Combine the 12 oz. coconut milk, sugar, 1 tsp. vanilla and ½ tsp. salt in a saucepan and bring to a gentle simmer. Whisk in the cornstarch slurry until the sauce thickens and serve warm over the bread pudding.
