Chef Grant dreamed up this playful Cup Noodle Fried Rice after rediscovering some cup noodles while cleaning out an old emergency storm kit. Crispy, savory and packed with bold flavor, this quick pantry-friendly meal transforms everyday ingredients into a fun twist on fried rice!

    Ingredients

    1 cup dry cup noodles
    ¾ cup water
    1 tbsp. salad oil
    1 egg, beaten
    ¾ cup cooked rice
    1 tbsp. shoyu
    1 tbsp. garlic chili paste
    2 tbsp. chopped green onions

    Instructions

Place the dry cup noodles into a zip-top bag and crush into pieces about ½ inch in size. Reserve the cup for serving. In a sauté pan over high heat, combine the crushed noodles and water, stirring until the noodles absorb all the liquid. Set aside.

Heat another sauté pan over high heat and add oil. Pour in the beaten egg, then add cooked rice, shoyu and garlic chili paste. Mix well until combined. Add the cooked noodles and continue mixing until evenly incorporated. Place chopped green onions into the reserved cup, pack the noodle fried rice mixture tightly into the cup, then invert onto a plate for serving.
